The harvest

To set a date for the wine harvest, agronomists take the grape's acidity into account as the key factor that reveals the quality of the grapes destined to become metodo classico.
Besides the acidity, the harvest date is decided by an analysis of the sugars, mineral salts and aromatic substances. The days leading up to the wine harvest are hectic: chemical analysis with samples from the vineyard is carried out every day, until the day and time are decided.
In Trentino mechanical wine harvesting is unknown, rather it is done by hand in small crates to protect the grapes as much as possible and to avoid damage that could alter the much sought-after balance.
As soon as the grapes are harvested, they are sent as quickly as possible to the winery and the production process starts immediately.
