The “Trento” controlled designation of origin (DOC) is reserved for white and rosé sparkling Italian wines obtained through the second fermentation method while in the bottle, which meet the terms and requirements established by current production regulations.

The regulations are vital as it is through this document that the basic rules for Trento D.O.C. production are regulated.

Signed by all Trentodoc producers, it is a guarantee of the following fundamental principles:
  • The seriousness of the cultivation and attention when selecting grape varieties, 
  • only Trentino grapes, 
  • original grape varieties: Chardonnay and/or Pinot Blanc and/or Pinot Noir and/or Pinot Meunier,
  • use of the process of second fermentation in the bottle, 
  • extended contact with the lees and related maturation times. 
However, the Trentino sparkling wine producers actually apply a much stricter and more severe set of rules than the regulations require. The time the wine rests on its lees, for example, is much longer, which is solely in the interests of improving the end quality of every single bottle of Trentodoc sparkling wine from the mountains.
