Blinis are a typical dish of Russian cuisine, usually made during the Christmas festive period. Here we suggest a recipe that pairs salmon with a Trentodoc Dossaggio Zero
- 300g salmon
For the blinis:
- 4 eggs
- 150g buckwheat flour
- 50g white flour
- 15g brewer’s yeast
- 50g milk
- 5g sugar
- extra-virgin olive oil
Mix the 4 egg yolks with the white flour and buckwheat flour, season with salt. Then add the brewer’s yeast dissolved in the milk and sugar and mix it to a smooth dough.
Leave everything to rest for 30 minutes and then add the egg whites, previously separated and beaten until stiff.
Put a drizzle of oil in a non-stick pan and place the dough on it in discs of medium thickness. Brown both sides for a few minutes and serve with the salmon (see picture).
The quality of the salmon is fundamental for the success of the dish and for enhancing the pairing with Trentodoc.
