Monfort represents one of the historic realities of Trentodoc, with over forty years of experience in Classic Method sparkling wine production, which began in 1985. Led by the Simoni family, the company has built over time a path based on vision, continuity, and deep knowledge of the Trentino territory. Production focuses on a careful selection of grapes from hillside vineyards located in Val di Cembra, Alta Valsugana, and the hills of Trento, chosen for their soil, altitude, and exposure—fundamental elements for expressing finesse and balance.

In 1985 Lorenzo Simoni, started to refine the first bottles in his cellar. That date has been imprinted in the Trentodoc Monfort Cuvée ’85 Brut, as evidence of how far this sparkling wine cellar’s commitment to the classic method is. The “recipe” was also taken from that time: not only more Chardonnay, but also a small percentage of Pinot noir: a touch of elegance inside a vortex of freshness and savoury.

Le Général Blanc sums up the Trentino region: freshness, minerality and verticality. A Trentodoc made from a careful selection of exclusively Chardonnay grapes from the vineyard terraces of the Cembra Valley and the limestone hills of Trento. The essence and freshness of Chardonnay, given the alpine environment, is enhanced by the choice of not adding any dosage. The long period spent on the lees brings the elegance of Trentodoc Le Général Blanc to its peak.

TRENTODOC MONFORT ROSÉ
It is distinguished by its intense and complex bouquet, with notes of minerals, fruitier hints of strawberry and red apple and a softness of taste that is rich, persistent and well balanced. The delicate, old pink colour is a sign of authenticity, with a creamy white foam and a fine, persistent perlage.
