Sarnis Blanc de Noir
SARNIS BLANC DE NOIR
A Trentodoc sparkling wine produced from a base wine made exclusively from Pinot Noir grapes. The grapes are carefully selected and harvested entirely by hand, generally during the first ten days of September. Upon arrival at the winery, the grapes undergo white vinification: gentle crushing is followed by equally delicate pressing. The separation of the must according to the different press fractions is essential to obtain a wine with no color extraction. Alcoholic fermentation takes place in stainless steel tanks at controlled temperatures. In the spring following the harvest, the secondary fermentation in the bottle begins according to the traditional method. This is followed by an ageing period on the lees of approximately 30 months.
